Dylan Rolfes is the Farm Manager at Travaasa Austin Resort in Austin, Texas, where he practices high intensity, sustainable farming methods to provide fresh produce for the resort’s farm-to-table restaurant.  From 2014-2016 Dylan was the Vineyard Manager and Viticulture Instructor at Highland Community College in Wamego, Kansas.  While at Highland Dylan managed several viticulture projects including the installation of a vineyard designed for mechanization and management of a forty-four-variety research vineyard, alongside the management of two other “typical” hand-labor vineyards.  He also taught viticulture classes ranging from Viticulture Botany to Spring Vineyard Mechanization and everything in-between.

Dylan developed an interest in botany at a young age, gardening with his father in rural Iowa (or “Heaven” as the locals call it).  He obtained both a B.S. and M.S. degree in Horticulture from Iowa State University, graduating in 2014.  While at Iowa State Dylan worked with and studied a large variety of crops, but developed a keen interest in viticulture due to the complex nature of grapevine physiology and the translation of this complex nature into dynamic management strategies.  Dylan’s thesis work centered on training systems and canopy management strategies for the improved quality of northern-hardy inter-specific hybrid grapes (‘Marquette’, ‘Frontenac’, and the like).  This project exposed Dylan to the effects of climate on grapevine physiology, and he could not be more excited to explore these effects as they range across the diverse landscapes of North America in VIN 213 - Regional Vineyard Management.
